I'll have to checkout Ken Forkish's book, but, in the meantime, I feel the need to throw out a quick mention of Jennie Shapter's Bread Baker's Bible. There is a fair bit of information on the science behind the recipes, and she doesn't take any shortcuts for convenience's sake. Her recipes for English muffins, pizza dough, and many other things have never left me wanting.

There are more recipies here than I anticipated and they are so simple. Some books are so intricate but this one is one, two, three and you are there. It explains additives and when and why to use them. I really love this book.

Could be better but it's OK
For a bible, missing a few recipes more from every part that is written.
I bought used one for 17 usd and that is OK but I see that new one is 174 usd and that is way to much for a this kind of book

This book is barely ok. I've been baking bread for years and even own a small at-home bakery. Some of these recipes are so wrong it's almost comical. Specifically the Polish Rye and German Sourdough. I mean WOW. The water to flour ratio is so incredibly off that I had to throw a batch away because it wasn't even knead-able. With the German Sourdough I added an entire CUP of flour LESS than the recipe called for and it was STILL incredibly stiff and hard to knead. Finally I started doing it my way and the bread sort of worked.

Some of the recipes are good like the tortillas, piadine and the fun breads like Swiss Braid, Pita, Onion loaf etc. But yea, I'm on the hunt for a better "breads of the world" book.

The book contains wonderful recipes for British, French, Mediterranean, North European, Scandinavian, American, Indian and Middle Eastern breads. I have made numerous breads from this "Bible" and each one has turned out wonderfully and beautifully, and I still consider myself somewhat of a bread-baking novice. I have especially enjoyed the recipes for Pugliese, Portuguese Corn Bread, Polish Rye Bread, German Sourdough Bread and English Muffins. But I look forward to trying all of the breads in this book as I dream about the many wonderful places from which these recipes come.
