A concise reference which focuses on sashimi basics. It briefly covers the concepts of materials involved and some basic preparation. I was disappointed with the minimal information on knife sharpening and maintenance, and also that there was little about how to select fish. Of course with the way the information was presented it may have been written assuming that the reader already had enough experience in that area. You may want to do research on these subjects as they are an integral part in safe sashimi preparation. There are many good recipes on presentation and the book overall is a rare find. Definitely worth the $. I only wish that there were more books out there with an emphasis on this subject.

The introduction and additional reading is inspiring.

I highly recommend this book since is the only one dedicated to sashimi, other books combine sashimi with sushi.
My goal is to prepare ceviche (and sashimi) with the presentation and style of sashimi.

I am new to the sushi kitchen, and needed a cookbook that would be easy enough for a beginner. This book is just right, and I'm very pleased with it. It explains everything very well, guiding you with purchasing supplies, and how to cut and assemble everything, even the garnishes. There are many recipes, easy enough for a beginner, that will make your sushi plate look like you've been doing this for a long time!
