After an excursion into Scandinavian ""living,"" drinking, restaurants, a tract on Danish, Swedish, Finnish and Icelandic fare, and smorgasbord tips, the author turns her attention to the matter at hand - how-to. For the traveller here's a recipe for reindeer pot roast, Swedish Crayfish, but most of the recipes allow the housewife to make do with the supermarket. The author puts a very bright face indeed on the admitted embarrassment of riches encountered by the calorie-conscious American in Scandinavian dishes, pointing out that cookery from the North is basically ""meat and potatoes"" with gorgeous desserts, and what more could a man ask?

This cookbook is a worthwhile addition to anyone's Scandinavian collection because it is so comprehensive. The late Ms. Hazelton, although not Scandinavian, had a diplomatic background and therefore had unusual exposure to a variety of high end cuisine via her extensive Scandinavian travels and contacts: She included recipes from royal households, renowned chefs and a broad spectrum of the Scandinavian aristocracy. She also obviously was an excellent cook and sought advice from both American and Scandinavian friends on what recipes to include! Apparently, she was the first American to introduce Scandinavian cooking in this country, with this cookbook. From review and sampling of her recipes, I believe that she has not muddled the separate Nordic cuisines, but has remained true to their unique characteristics, in her presentations. I highly recommend this cookbook.
