I bought this copy for a gift but my husband and I received this book as a wedding present eleven years ago and it is the resource that I most often consult when I need the answer to a food or cooking question. Need to know the difference between two varieties of the same fruit? Need an easier technique for a cooking procedure. It's probably in here.
Unfortunately, you won't find it at Williams Sonoma anymore, so be sure to buy it here on Amazon. The bookseller that filled my order checked and sent me an email to confirm that his copy was in absolute new condition and then shipped promptly.

This is my go-to book for lots of cooking-related questions. Just the other day, the subject of "how is corned beef made" came up at a dinner party and, voila, The Kitchen Companion provided the answer. I have referred to it time and time, again. It's like having my (deceased) mother and grandmothers always available for cooking-related questions.

Makes a GREAT gift, too, for youngsters who have attained adulthood and are beginning to set up their homes. I've gifted newlyweds and recent college grads, alike, with this book.

Too Bad this book is no longer in print but glad so many are available used. This is the Kitchen Companion Book of All Times. There are other's out there but limit their interpretations or definitions. This book does not. I bought a second copy for a young teenage boy who aspires to grow up and become a chef. A great start to learn culinary terminology.

This is an incredibly valuable kitchen resource. If you are looking for information on apples, for example, there is a complete section on all different types of apples, which ones are best for baking, how to choose them, etc. That type of information is available for any type of food you can think of, plus kicthen tools and information, comparisons of different types of cookie sheets, saucepans, etc. This is in my top three food/cooking reference books.

Found a copy in a thrift store, and was enthralled for days. Ended up buying a copy for each of my girls and daughter in law--they all loved it!
An absolutely invaluable reference. Substitutions, techniques, even liquor flavors are listed. Rather than just listing recipes, this gives the science, chemistry, and technique behind cooking and baking for a deeper understanding. It opens doors for experimentation and modification for personal health, taste, food allergies, or just for fun. A must-have for anyone interested in cooking or baking beyond mixes and boxes!

I originally bought this book for a friend who was afraid of her kitchen. She's been married for two years now, and LOVES this book! I bought a copy for myself and have similarly found it useful.
This book is convienent to use during the cooking process: if you don't understand a certain word in a recipe, look it up in the Kitchen Companion! It's alphabetically organized by ingredient or term and is meant to be used with recipes, not by itself. The entries offer a description of the item as well as helpful cooking suggestions and even some interesting background information on where things come from. It's beginner-friendly, and is a joy for more experienced cooks as well.

Every kitchen needs this book. Many how to's. From selecting beef and where cuts are from to the different types of potatoes and how to cook them. From Al Dente, to how to store anchovy once opened. Excellent book
